Mediterranean-type food, I very much enjoy. The flavors are always bold, yet they taste fresh. This dish is inspired by that. This Kofta meat is made with beef and cooked in a pan. I use non-stick ceramic pans in particular. As I was eating these, every bite was filled with, “This is SO good.”
Ingredients
Rice
- 2 cups Basmati Rice
- 2 1/4 cups Water
Meat
- 1/3 cup Sour Cream or Yogurt
- 1/4 tsp Shredded Ginger
- 1 tsp Lemon Juice
- 1 tsp Honey
- 1 tbsp Finally Chopped Red Onion
- 1 Egg
- 1/4 cup Bread (The soft parts only)
- 1 lb Ground Beef – Defrosted
- 1/2 tsp Salt
- 1/4 tsp Ground Pepper
- 1/2 tsp Parsley
- 1/4 tsp Paprika
- 1/4 tsp Curry
- 1/2 tsp Garlic Powder
- 1/4 tsp Oregano
- 1/4 tsp Ground Cumin
- 1 tsp Olive Oil (for the meat mixture)
- 1 tsp Olive Oil (For cooking)
Salad
- 1 1/2 cups Sliced and Cubed Cucumber
- 4 tsp Sliced Red Onion
- 1/2 Lemon Juice
- 1 tsp Olive Oil
- Sprinkle of Salt
- Sprinkle of Ground Pepper
Instructions
Rice
- Rinse and drain water from your rice at least five times in your pot or in a separate bowl.
- Add your rice and water to your pot and turn the heat to high.
- Once the rice and water are at a boil, turn the heat to 3/4 out of 10.
- Allow this to cook for 10-15 minutes. (Once you lift the lid and can no longer hear the sound of water boiling, it’s ready.)
- Turn off your heat and allow it to sit.
Meat
- Place all of your ingredients except the olive oil for cooking into one bowl and mix with your hands until everything is well incorporated.
- Turn your pan on to about a 6/10 heat and add your olive oil to it.
- Roll your meat into hot dog-shaped spheres about 3 inches long.
- Place them onto the pan individually, not allowing them to touch each other.
- Each piece should take about 10-14 minutes to cook per side. (I cook them in “triangles.” Breaking down the cooking process into three different sides. Once the outside of each side has a nice crust to it, it’s ready.)
Salad
- Chop your cucumbers and slice your onions and add them to your bowl.
- Then add your lemon juice, olive oil, salt, and pepper. Mix.

- Place all of your ingredients except the olive oil for cooking into one bowl and mix with your hands until everything is well incorporated.
- Turn your pan on to about a 6/10 heat and add your olive oil to it.

Salad

Plating
- Place your rice in the bowl first, then place your meat on top of the rice. And add your salad to the side. Optional: You can always add a scoop or two of sour cream or feta cheese.
