Homemade Ramen: A Twist on Classic Recipes

Ramen… Something that some people absolutely love eating. Even though it’s made out of pure poison. Might as well be eating a cardboard box for dinner with pure gasoline. Just my opinion.

I do have a 9-year-old who enjoys eating this cardboard box, though. So, here I am making this thing from scratch. I was at the store and came across some ramen noodles. Made sure to grab those, and got to brainstorming.

A bowl of ramen noodles topped with two halved boiled eggs and lime wedges, alongside a golden fork. A large white pumpkin sits in the background on a marble countertop.

I once made some sourdough cheese-its. Went a little crazy and added too much turmeric. They tasted like Ramen. So, we called them Ramen-its. I knew then that the secret ingredient to the Ramen was turmeric and ran with it for the recipe here.

Add a little sriracha and some lime juice and you’ll really be cooking.

Cuisine: American, Chinese

Ingredients

  • 1 tbsp Olive Oil
  • 3 tbsp Butter
  • 3/4 Onion
  • 2 Carrots Peeled and chopped
  • 1 cup Cabbage
  • 2 cloves Garlic
  • 1 cup Frozen Sweet Corn
  • 2 quarts/liters Chicken Stock
  • 1 1/2 tsp Salt
  • 1 tsp Paprika
  • 1/4 tsp Curry
  • 1/2 tsp Turmeric
  • 1 tsp Parsley
  • 1/4 tsp Chili Flakes If you want it a little spicy
  • 4 blocks Ramen Noodles

Method

  1. Add your pot to your stove and turn the heat to medium. Add olive oil and butter.
  2. Chop up your onion and add to cook for 2-3 minutes. Meanwhile, peel and chop your carrots.
  3. Add your carrots to the pot and mix. Allow those to cook for 2-4 minutes. Chop your cabbage in the meantime.
  4. Add your cabbage to the pot and mix. Allow that to cook while mincing your garlic. Allow that to cook for 3-4 minutes.
  5. Add your corn and all of the seasonings to the pot and allow that to cook for another 8-10 minutes.
  6. Add the stock to the pot and bring the heat level to high. Allow it to come to a boil.
  7. Once it's boiling, add the noodles to the pot. Allow those to cook according to the instructions on the packet. (Mine says 5-8 minutes.)

Notes

-Optional: You can always add frozen or canned peas to the soup as well.
