Method
- Add your pot to your stove and turn the heat to medium. Add olive oil and butter.
- Chop up your onion and add to cook for 2-3 minutes. Meanwhile, peel and chop your carrots.
- Add your carrots to the pot and mix. Allow those to cook for 2-4 minutes. Chop your cabbage in the meantime.
- Add your cabbage to the pot and mix. Allow that to cook while mincing your garlic. Allow that to cook for 3-4 minutes.
- Add your corn and all of the seasonings to the pot and allow that to cook for another 8-10 minutes.
- Add the stock to the pot and bring the heat level to high. Allow it to come to a boil.
- Once it's boiling, add the noodles to the pot. Allow those to cook according to the instructions on the packet. (Mine says 5-8 minutes.)
Notes
-Optional: You can always add frozen or canned peas to the soup as well.
