If you’re looking for a winter salad that is both sweet and a little spicy, here it is. This is my recipe for Adjika. Adjika is mainly made from peppers. You can use different kinds. Usually they’re made with Bulgarian peppers. But today we’re using bell peppers. This will create a savory and crispier salad for the winter.
I understand that a winter salad can be a foreign concept to the Americas. But in many parts of the world, people save their harvests for the winter by canning. This doesn’t have to be limited to pickling, salsas, and jams. Oh no. There is much more. Winter salads are delicious ways to enjoy that harvest by cooking down the harvest into a new dish. A side dish, a sauce, or a “salad” to add to your meals. Every time I make a winter salad, I make sure to dip a piece of bread into the pot. And man on man, is it enjoyable.
As we know, when your veggies are grown in your garden, their taste is incomparable. Store-bought doesn’t come close. So if I can enjoy the real and flavorful taste of my harvest in the winter, sign me up.
I like to eat Adjika as a sauce. I’ll add it to my eggs, tortillas, and even pasta dishes. Make sure you throw in a few chilies if you enjoy heat like I do.

- Wash and remove your stems/seeds from your peppers. Then run them through your food processor until well blended.
- Add your oil to your pot or Dutch oven.
- Heat your stove top to low/medium heat and add your pot or Dutch oven.
- Add your peppers to the pot. Allow those to cook for 25 minutes while stirring occasionally.
- Meanwhile, prepare your tomatoes by washing, removing stems, and running them through your food processor until well blended.
- Add them to the pot with your peppers. Mix occasionally and allow that to cook for 15 minutes.
- Meanwhile, remove skin from garlic and trim ends off. Then remove stems from chili peppers.
- Place garlic and chili peppers into a food processor until well blended.
- Add your garlic, chili peppers, sugar, and seasonings to the pot. Mix occasionally and allow to cook for another 15-20 minutes.
- Add your apple cider vinegar and remove from the heat.
- Place your cleaned jars into your oven at 170 degrees Fahrenheit for 15 minutes. And place your lids into a pot of boiling water for 3-5 minutes.
- Fill the jars with the adjika. Allow for 1/2 an inch of space at the top.
- Then seal each lid tightly. But not too tightly.
- Place each jar upside down onto a kitchen towel. Then cover all of the jars together with the towel to keep the warmth in.
- Allow those to rest untouched for 12-24 hours. Then, enjoy!
