Cut up the pears. Remove and discard the imperfections. Add to the pot.
Add 1 cup of brown sugar and vanilla. Mix and allow it to soak into the pears for 2-12 hours.
Turn your burner temperature to medium/high and mix.
Get the mixture to a boil and allow it to boil for 2-3 minutes while stirring. Then remove from heat.
Allow the mixture to stand another 2-12 hours.
Add 1/2 cup of brown sugar and 1/2 cup of powdered sugar and mix.
Bring to a boil for another 2-3 minutes while stirring.
Prepare your jars. Place your lids into boiling water. Place your washed jars into your oven at 170 degrees Fahrenheit for 10-15 minutes.
Add your jam to your jars and leave about 1/2-1 inch of head space. Tighten lids.
Place the jars upside down onto a towel. Then wrap them in that towel and allow them to rest there undisturbed for 12-24 hours.
Flip them, then check if they've sealed. Enjoy!
