Ingredients

Dough
  • 1/2 cup Sourdough Starter Active
  • 3 cups Flour
  • 1 tbsp Honey
  • 1 1/2 tsp Salt
  • 1 cup Whole Milk 80-100 degrees
  • 3 tbsp Butter Unsalted
Beef
  • 1/4 tsp Olive Oil
  • 1 lb Ground Beef Defrosted
  • 1/2 Onion Grated
  • 1/4 tsp Pepper
  • 1/2 tsp Parsley
  • 1 tsp Lemon Juice
  • 1/2 tsp Salt
  • 1 tsp Garlic Powder
  • 1/4 cup Cheddar Cheese
  • 1/2 tsp Fresh Thyme
Baking
  • 1 Egg

Method

Dough
  1. Mix all of your ingredients on low to medium speed for 6-8 minutes.
  2. Allow this to rest and ferment for 6-8 hours.
Beef Filling
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Turn your burner to medium heat. Add your pan and your oil to the pan.
  3. Add your onions and allow those to cook until translucent. About 6-8 minutes.
  4. Add your beef and beef seasonings other than your fresh thyme. Break the beef down while it's cooking, and mix. Allow to cook for 8-10 minutes. Or until all pink is gone.
  5. Once the beef mixture is cooked, place it into a medium sized mixing bowl with a utensil that allows you to grab the beef with as little oil as possible. (This oil makes it very hard to assemble the piroshki later on.)
  6. Add your cheese and fresh thyme to the bowl and mix.
Assembly
  1. Place the dough onto a lightly floured surface and cut the dough into 8 equal pieces.
  2. Roll out your pieces flat and place the meat filling mixture into each pirazhok.
  3. Pinch each Pirazhok closed and place it onto a parchment paper covered baking sheet.
  4. Brush each pirazhok with eggwash.
  5. Bake for 20-22 minutes. Enjoy once cooled down!
