Method
Dough Prep
- Mix dry ingredients with a whisk in a bowl.
- Shred butter into the bowl and mix.
- Add iced water 1/4 cup at a time. Mix with your hands. Do this for about 3 minutes.
- Move the dough to a lightly floured surface and then knead it into a ball for 2-4 minutes.
- Wrap the dough with plastic wrap and place it into the fridge for 30 min-2 hours.
Apple Filling
- Dice apples into 1/2 inch cubes. Discard the seeds and core.
- Mix all of the ingredients for the apple filling in a bowl.
Assembly
- Preheat oven to 405 degrees Fahrenheit.
- Flour your work surface.
- Roll out the dough.
- Fold the door like you'd fold a piece of paper to fit into an envelope.
- Roll out the dough once more.
- Cut the dough into pieces that are 4x6 rectangles.
- With half of those rectangles, cut out diagonal lines in the middle. These will be for the tops.
- Cover your baking sheet with parchment paper.
- Place your pieces meant for the bottoms onto the parchment paper. Then add your filling onto them in the middle.
- Add your tops onto each bottom piece and press down the ends tightly.
- Go around the ends with a fork, pressing down to imprint the lines on the edges.
- Add eggwash to the tops.
- Bake for 20-22 minutes. Enjoy!
