Method
Jar Prep
- Put your lids into a bowl of boiling water. Place your jars into the oven at 170 degrees Fahrenheit for 15 minutes.
Cucumber Prep
- Wash your dill and cucumbers.
- Slice your cucumbers into fourths length-wise.
- Place your cucumbers into the jar, making sure they're compact. Leave at least 1 inch of headspace at the top.
- Add your garlic, dill, bay leaf, salt, and lastly filtered water. You want everything submerged under the water. You can wash and add a stone if you need to hold everything under the water.
- Place your lids onto the jars. Close the jars loosely.
- Put the jars into a cold and dark spot away from sunlight for 4-5 days of fermentation. Check on the jars at least once a day to open the lid to release pressure. Seeing bubbles is normal and good.
- After the 4-5 days of fermentation you can seal the lids more tightly.
- You store them in a dark, cold place for up to 9 months. Or in the refrigerator for up to a year.
